This beautiful Berry White Waffle Cake is the perfect Valentine’s Day treat to make for someone special or for a sweet end to your love filled day or dinner party!! It’s a great way to bring a little romance into your house for a date night at home. Who doesn’t love waffles, whipped cream and berries? YES please!!
This is one of my favourite recipes to make for Valentine’s Day that we made a couple years ago and I’m so excited to share it again for you! Originally I featured this delicious berry waffle cake on a Valentine’s segment on
Novus TV. Our friends at
White Table Catering prepared this cake for the segment and I was so blown away with how amazing it looked and how good it tasted!!
It’s a great combination of waffles, berry and whipped cream in the structure of a cake.
I just wanted to eat it all while filming that we had to share the recipe with you to recreate it yourself just in time for Valentine’s Day. And there is plenty to share with all your loved ones. Happy heart day my loves!!!

Berry White Waffle Cake Recipe
*I personally added in Dairy-Free substitutes for you guys!!
Waffles:
2 cups flour
3/4 cup sugar (maple syrup or honey also works nicely)
3 1/2 teaspoons baking powder
2 eggs
1 1/2 cups milk (or coconut milk )
1 cup butter melted (I use Earth’s Own Vegan Butter)
1 teaspoon vanilla extract
Filling:
1 cup mascarpone cheese
2 1/2 cups whipping cream (Thai’s Kitchen full fat coconut milk)
1 teaspoon vanilla extract
1/4 cup icing sugar
1/4 cup Frangelico liquor
2 1/2 cups assorted berries, plus more for garnish

Directions:
Place 2 cups of cold whipping cream into a mixer with a whisk attachment. On medium high, whisk until soft peaks are formed. Add icing sugar and vanilla extract and whisk until still peaks are formed. Remove whipped cream into a separate bowl.
Place mascarpone into the mixer with 1/2 cup remaining whipping cream and Frangelico Liquor. Whisk until smooth and light. Fold whipped mascarpone into whipped cream.
Heat a waffle iron coated with cooking spray.
Whisk waffle ingredients together until smooth. Lightly cover waffle iron with batter, allowing room for expansion, approximately 1 cup.
Cook waffles until golden brown (approximately 4 minutes).
Cool the waffles on a wire rack until room temperature.
Place one waffle on a cake plate and spread 1/4 of the mascarpone cream over the top of the waffle. Top with 1/4 of the berries.
